Stuffed Mushrooms
Stuffed Mushrooms
Ingredients:
- 20 mushrooms
- 3 tablespoons butter
- 2 tablespoons finely chopped onions
- 2 tablespoons finely chopped red peppers (you can mix in green bell peppers also if you’d like)
- 15 crushed Ritz Crackers
- 2 Tbsp. Parmesan Grated Cheese
- 1/2 tsp. dried Italian seasoning
Directions:
- Heat oven to 400
- Remove stems from mushrooms
- Chop enough stems to measure 1/4 cup
- Melt butter in small skillet on medium heat
- Add chopped stems, onions and peppers to skillet. Cook and stir 5 min. or until tender
- Stir in cracker crumbs, cheese and seasoning
- Spoon mixture into mushrooms
- Place on baking sheet
- Bake 15 min
