Apple Pie Cheesecake Parfaits
INGREDIENTS:
FOR THE CRUST
- 1 Sleeve Graham Crackers
- 1/4 Cup Butter
FOR THE CHEESECAKE
- 8oz Cream Cheese
- 1/2-1 Cup Powdered Sugar
- 1tsp Vanilla Extract
FOR APPLES:
- 4 apples, peeled and sliced 1/4 inch thick
- 1/4 cup butter
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/2 cup cold water
- 2 teaspoons cornstarch
FOR THE TOPPING:
Cool Whip
Caramel Drizzle

INSTRUCTIONS:
FOR THE CRUST:
- Melt butter.
- Place graham crackers in into a food processor and pulse into fine crumbs. If you do not have a food processor, place graham crackers in a Ziplock bag and crush with a rolling pin.
- Mix graham cracker crumbs and melted butter.
FOR THE CHEESECAKE
- In a large mixing bowl, mix together cream cheese, powder sugar and vanilla extract with a hand mixer.
FOR APPLES:
- Melt the butter in a large saucepan over medium heat.
- Add the apples, stirring continuously, for about 7 minutes or until apples are tender.
- Mix the water and cornstarch in a small bowl, dissolving the cornstarch. Pour over the apples.
- Stir in the brown sugar and cinnamon.
- Bring to a boil for about 2 minutes, stirring occasionally.
- Remove from heat.
ASSEMBLY:
- To assemble the cheesecake parfaits, add a few spoonfuls of the cheesecake mixture to the bottom of a glass. Add a layer of the graham crackers mixture. Top with a layer of apples.
Top with cool whip.
Drizzel caramel on top. (optional)
