Apple Pie Cheesecake Parfaits

INGREDIENTS:

FOR THE CRUST

  • 1 Sleeve Graham Crackers
  • 1/4 Cup Butter

FOR THE CHEESECAKE

  • 8oz Cream Cheese
  • 1/2-1 Cup Powdered Sugar
  • 1tsp Vanilla Extract

FOR APPLES:

  • 4 apples, peeled and sliced 1/4 inch thick
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup cold water
  • 2 teaspoons cornstarch

FOR THE TOPPING:

Cool Whip

Caramel Drizzle

Apple Pie Cheesecake Parfait

INSTRUCTIONS:

FOR THE CRUST:

  • Melt butter.
  • Place graham crackers in into a food processor and pulse into fine crumbs. If you do not have a food processor, place graham crackers in a Ziplock bag and crush with a rolling pin.
  • Mix graham cracker crumbs and melted butter.

FOR THE CHEESECAKE

FOR APPLES:

  • Melt the butter in a large saucepan over medium heat.
  • Add the apples, stirring continuously, for about 7 minutes or until apples are tender.
  • Mix the water and cornstarch in a small bowl, dissolving the cornstarch. Pour over the apples.
  • Stir in the brown sugar and cinnamon.
  • Bring to a boil for about 2 minutes, stirring occasionally.
  • Remove from heat.

ASSEMBLY:

  • To assemble the cheesecake parfaits, add a few spoonfuls of the cheesecake mixture to the bottom of a glass. Add a layer of the graham crackers mixture. Top with a layer of apples.

Top with cool whip.

Drizzel caramel on top. (optional)

ENJOY!
