This is one of my favorite cupcake recipes! They’re so delicious! A must try!

Cherry Dr. Pepper Cupcakes

INGREDIENTS:

For the cake:

  • 3/4 cup Dr. Pepper
  • 1/4 cup vegetable oil
  • 4 tablespoons butter (1/2 stick)
  • 2 tablespoons cocoa powder
  • 1 cup sugar
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1/2 cup cherries, sliced

For the frosting:

  • 8 ounces cream cheese
  • 4 cups powdered sugar
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/2 cup cherries, sliced
  • 2-3 teaspoons cherry juice

INSTRUCTIONS:

For the cake:

  1. Preheat the oven to 350 degrees.
  2. Combine the Dr. Pepper, oil, butter and cocoa powder in a pan over medium heat. Bring to a boil. Stir well and remove from the heat.
  3. In a large bowl mix together the flour, sugar and baking soda.
  4. Add the dry ingredients to the pan. Mix well.
  5. Whisk together the eggs and add to pan. Mix well.
  6. Add the cherries to the cake mixture and mix well.
  7. Pour the cupcake batter into a cupcake pan and bake for 23 minutes or until a toothpick inserted comes out clean.
  8. Let the cupcakes cool.

For the frosting:

  1. Combine the cream cheese and butter into the bowl of a stand mixer and mix well. Mix until completely smooth with no clumps.
  2. Add the vanilla extract and salt. Mix well.
  3. Gradually mix in the powdered sugar. Mix until smooth.
  4. Mix in the cherries and cherry juice.
  5. Use a piping bag to frost the cupcakes.
