Cherry Dr. Pepper Cupcakes

Cherry Dr. Pepper Cupcakes
INGREDIENTS:
For the cake:
- 3/4 cup Dr. Pepper
- 1/4 cup vegetable oil
- 4 tablespoons butter (1/2 stick)
- 2 tablespoons cocoa powder
- 1 cup sugar
- 1 cup flour
- 1/2 teaspoon baking powder
- 1 egg
- 1/2 cup cherries, sliced
For the frosting:
- 8 ounces cream cheese
- 4 cups powdered sugar
- 1/2 cup butter
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 cup cherries, sliced
- 2-3 teaspoons cherry juice
INSTRUCTIONS:
For the cake:
- Preheat the oven to 350 degrees.
- Combine the Dr. Pepper, oil, butter and cocoa powder in a pan over medium heat. Bring to a boil. Stir well and remove from the heat.
- In a large bowl mix together the flour, sugar and baking soda.
- Add the dry ingredients to the pan. Mix well.
- Whisk together the eggs and add to pan. Mix well.
- Add the cherries to the cake mixture and mix well.
- Pour the cupcake batter into a cupcake pan and bake for 23 minutes or until a toothpick inserted comes out clean.
- Let the cupcakes cool.
For the frosting:
- Combine the cream cheese and butter into the bowl of a stand mixer and mix well. Mix until completely smooth with no clumps.
- Add the vanilla extract and salt. Mix well.
- Gradually mix in the powdered sugar. Mix until smooth.
- Mix in the cherries and cherry juice.
- Use a piping bag to frost the cupcakes.
