Sheet Pan Chicken, Mushrooms and Vegetables

INGREDIENTS:

  • 4 Chicken Breasts
  • 4 Potatoes, chopped
  • 5 Carrots, chopped
  • Mushrooms
  • 1 Onion, chopped
  • 2 bulbs Garlic, peeled
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Oil
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • 1 teaspoon Salt
  • 1/4 teaspoon Black Pepper

INSTRUCIONS:

  1. Preheat the oven to 375 degrees.
  2. Place the chicken on a large baking sheet.
  3. Surround the chicken breasts with the potatoes, carrots, mushrooms, onions and garlic.
  4. Mix together the lemon juice, cooking oil, rosemary, thyme, salt and pepper. Pour over the chicken, mushrooms and vegetables, mixing well.
  5. Bake for about 30-45 minutes until the chicken is done.
